Whipping cream
1/2 -1 tsp. sugar
1 tsp. vanilla extract

*Irish coffee or liqueurs

Using a mixer, whip cream and add sugar to taste. Beat slightly more to thicken. Add vanilla extract, continue whipping until thick.

*For "special occasions" add Irish coffee or any old coffee, including any liqueur (very small amount - needs no sugar).

This takes a very short time and is much better than store-bought whipped cream -- unless you are in a hurry!

Whipped cream freezes very well -- in bulk, or dropped by teaspoon "dollops" on cookie sheet covered with waxed paper and then put into freezer bags when frozen.

Here's a neat way to use your demitasse for special occasions: Make coffee a little stronger than your usual cup. Pour coffee, then add liqueur and "dollop" of whipped cream to individual cups.
