Ingredients: CRUST 1 1/4 cups graham cracker crumbs 1/4 cup softened butter or margarine 1/4 cup sugar or less FILLING 1/2 cup sugar 1/4 tsp salt 1 tbsp flour 1 tbsp cornstarch 2 cups milk 2 egg yokes beaten 1 tbsp butter 1 tsp vanilla
MERINGUE: 2 egg whites few grains of salt 1/4 cup sugar

Directions:Crust: Blend together using fingers Set aside 1/3 cup crumb mix, press remainder into 8" pie plate. Bake @ 375 for 8 mins. Cool.
Filling: At moderate heat stir the milk constantly. when near boiling add some of the milk to the dry ingredients and yolks. Mix, then add the mixture to the milk in pot and heat to boiling for 3-5 mins. Let cool at least 10 mins.then pour into crust.
Topping: Beat egg whites and salt till they hold a soft peak then gradually add sugar until meringue is stiff. Spread over filling then top with remaining crumbs. Bake @ 425 until golden brown (5 mins). Cool and serve |
