1 large lemon; zested, seeded, and chopped into small pieces
1 large orange; zested, seeded, and chopped into small pieces
2 large carrots; peeled and grated
1/2 cup honey
3/4 cup sugar
1/2 cup water
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 teaspoon grated fresh ginger
3 tablespoons fresh-cracked black peppercorns
2 (4 oz.) logs goat cheese

Marmalade: In a medium saucepan over medium heat, add all ingredients except the pepper and cheese and cook, uncovered, stirring until fruit becomes translucent, about 45 minutes. Cool to room temperature and refrigerate in an airtight container until ready to use.

Goat Cheese Log: Carefully unwrap the cheese, keeping the logs intact. Place pepper on a sheet of waxed paper and roll goat cheese logs in the pepper. Serve goat cheese with Citrus Carrot Marmalade and water crackers or toasted baguette slices.

The marmalade has to be constantly stirred for 45 minutes so make sure you have the time to dedicate to the task. Well worth it. The marmalade is great any time and makes terrific holiday gifts.
