9 c bread pieces
1/2 c butter or marg.
1 c diced onion
1 c sliced celery (fairly fine)
1/2 c to 1 c sausage meat
2 c chopped apple
1 tbsp salt
1/2 tsp pepper
1/2 tsp ground allspice
1 tsp sage
1 tsp thyme

Directions:
Directions:
Break up and brown sausage meat in butter, add onion, celery, and apple, and cook until tender but not brown. Mix well with bread pieces (1 slice into 8ths) until moist, but don’t compact too much. Stuff into both ends of the bird. Anything that won’t fit can be baked separately in the oven but only about 1.5 hours.

The onion, celery, and apple can be cut up the day before and stored in the fridge in baggies, overnight. This recipe can be expanded by using the whole chub of sausage and more of all ingredients.
