Ingredients: 4 oz. uncooked dried rotini pasta Salad: 1 c. halved strawberries 1 c. raspberries 1 c. celery, sliced thin 2 med. kiwi fruit, peeled & sliced 3 c. torn fresh spinach Dressing: 1 10oz. pkg. frozen raspberries in light syrup,drained reserving juice 1/2 t. ginger 1/8 t. salt 1 t. grated lemon peel 3 T. reserved raspberry juice 2 T. olive or vegetable oil 1 T. raspberry vinegar, red or white wine vinegar 1 T. honey

Directions:Cook pasta and rinse with cold water;drain and set aside. In food processor, puree raspberries. Press pureed raspberries through wire mesh strainer; discard seeds. In sm. bowl, with wire whisk, stir together puree and all remaining dressing ingredients, set aside. In large bowl, gently toss together all salad ingredients except spinach. Just before serving, arrange spinach on serving platter or individual serving plates. Gently mix cooked pasta with salad ingredients. Spoon salad over spinach; serve with dressing. |

Notes: This was a favorite when I served luncheons. I found doing as much prep the night before, saved me time the next day. The day of the luncheon, the ladies arrived. I seated them on the front porch & served them a glass of sparkling cider and told them I would get their salads together and call them to the table. I went to the kitchen to get everything out of the refrigerator. Where was my pasta? Patrick was on the deck, so I asked if he'd seen it, yes, he had! He & a friend had eaten it the night before, thinking it was "leftovers"! I returned to the ladies, explaining II would need 13-14 min. more. Thank goodness, pasta doesn't take long to cook.(But, have you ever noticed how long it takes to boil water? It's true, a watched pot never boils!
