2 heads Romaine lettuce
1 1/2 c. cubed bread, sliced or French
1/2 lb. bacon, cooked, drained and chopped
3 cloves garlic, minced with 1 tsp. salt
2 anchovies, with or without capers
3/4 c. olive oil, divided
1 egg yolk
1 lemon, juice only
2 T. Worcestershire sauce
2 tsp. pepper
1 tsp. dry mustard or hot paste mustard
Dash of hot pepper sauce to taste
1 c. Parmesan cheese, grated

Wash, dry and tear lettuce into small pieces and chill. Brush bread pieces with butter or bacon fat and bake until light brown. Or, sauté bread pieces in a skillet until light brown. Remove bread and set on paper towel. Mash garlic with salt, add anchovies and 1/2 c. oil, and mash mixture into a paste. Stir in 1/4 c. oil, egg yolk, lemon juice, Worcestershire sauce, pepper, mustard and hot pepper sauce. Blend mixture until well combined. This can be made a day ahead of time. Put lettuce in a bowl, add croutons, bacon bits, Parmesan cheese and pour oil mixture over it. Mix until well combined. Toss and add salt and pepper to taste. Serves 6-8. *Caesar salad has been created using many other recipes, but the use of fresh quality ingredients is vital in order to produce the best Caesar salad in the world. You can be sure that this Caesar salad will outdo those that are made in many 5-star restaurants.
