1 (390g or 12 oz.) pkg. mandu wrappers
1/4 c. butter, melted
2 large eggs
1 c. sugar, divided
1 T. all-purpose flour
1 c. cold water
2 T. apple cider vinegar
Cinnamon for dusting

Preheat oven to 190°C (350°F). Brush one wrap at a time on both sides with melted butter, press wraps into muffin pan cups, leaving edges extended. Continue with rest of wraps to make 24. Set aside. To make the filling, whisk together eggs and 1/4 c. sugar in a bowl until well blended. In a heavy saucepan, whisk together flour and remaining 3/4 c. sugar, then whisk in water and apple cider vinegar. Bring to a boil, whisking until sugar is dissolved. Add egg mixture in a slow stream, whisking constantly. Be careful not to add eggs too quickly. Cook over moderate heat, constantly stirring with a wooden spoon until filling coats back of spoon, about 10 minutes. Remove from heat. It is best to put mixture through a sieve to remove any particles and to insure the custard mix is smooth and creamy. Place a T. of mixture into each wrap in muffin cups. Place in oven and bake for 20 minutes or until filling is set and edges of wraps are brown. Remove from oven and brush with remaining butter. Cool completely and dust evenly with cinnamon. Put cinnamon in a sieve and shake sieve over wraps. Serves 8 at 3 wraps per person. *I used a 24 count muffin pan, but you may use whatever size you like.
