Ingredients: 340 g (2 3/4 c.) almonds, slivered or blanched, brown skin removed 2 c. powdered sugar 2 egg whites, room temperature 1/4 c. plus 2 T. black sesame seeds 1/4 c. butter, melted 340 g (about 54) mandu wrappers

Directions:Preheat oven to 180°C (355°F). Put almonds in a food processor and process until well ground. Add powdered sugar and continue processing. Add egg whites and process until smooth. Knead until it feels like dough. Wet hands with warm water and knead for a few more minutes. This can be made the day before, covered and stored in refrigerator. Place black sesame seeds in a shallow dish. Take a heaping teaspoonful of almond filling, roll into a 12 cm rod, and roll in seeds, cover and set aside. Makes about 27 rods. Place one wrap on flat surface and brush with butter. Place a second wrap on top and brush again. Place almond rod in center and wrap the skin around it. Dip your fingers in warm water and seal wrap. Do the same for rest of rods. Brush baking pan with butter. Place rods in pan and place in oven. Bake for 10 minutes. Turn over and bake for another 10 minutes or until golden brown. Serves 7. *Leftover almond paste can be covered and refrigerated for later use. |
