2 English cucumbers (about 12 in. long; trim ends)
1 c. cream cheese beaten until fluffy
finely chopped red bell pepper and scallions

Directions:
Directions:
Use a fork to score the sides of the cucumbers.
Slice into 3/4 in. thick rounds.
Use teaspoon or melon baller to scoop 1/3 in. deep well in center of each slice.
Spoon 1/2 tsp. cream cheese into each cup , molding slightly.
Sprinkle each with scallions and red peppers.

Make ahead tips;
The unfilled cucumbers can be made the day before.
Arrange on damp paper towel.
