2 pounds zucchini, yellow squash, patty pan, or crookneck
2 medium onions, chopped
1 (6 ounce) box chicken stuffing mix, such as Stove Top
1/2 cup butter, melted
1 cup grated carrots
1 cup sour cream
1 can cream of chicken soup
Pepper and Salt to taste

Directions:
Directions:
Place squash and onions in a large pan with a little water. Bring to a boil (to steam); then reduce heat, cover and simmer 5 minutes. Drain well. Do NOT follow package directions for stuffing mix. Place crumbs in a small bowl; add melted butter and mix thoroughly. In large bowl, combine drained squash, carrots, sour cream, soup, pepper, salt and all but 1/2 cup of the stuffing mix; stir well. Place squash mixture in lightly greased 2 quart casserole, then top with the remaining stuffing mix. Bake at 350 degrees for 30 to 40 min.
