4 large russet baking potatoes
Salt (to taste)
1/4 tsp. black pepper
1 cup of mayonnaise (preferably Hellmann's)
Garlic cloves, crushed (we use about three because we love garlic!)
5.5 oz. dill pickle slices, diced (preferably "Best Maid")
3 green onions, green and white parts, chopped
1 green bell pepper (add red bell pepper for color/extra taste), chopped
2 stalks celery, diced
3 tbsp. yellow mustard (preferably French's), divided use
1 - 2 tbsp. vinaigrette salad dressing (we prefer Paul Newman's Balsamic Vinaigrette)
3 hard-boiled eggs, diced
1 tbsp. Spicy Dijon mustard (or more, to taste)
1/8 tsp.cayenne pepper (to taste)

Skin potatoes, quarter and boil in slightly salted water. You want them to be relatively soft (can put a fork in them and pull it out fairly easily), but not so soft that they are mushy. We like some potato chunks, along with the semi-mashed potatoes in the salad. Drain potatoes and place in large bowl to cut up/semi-mash.

I like to add the ingredients when the potatoes are still warm as they absorb the flavors better. Add salt and black pepper to potatoes to season. Next, add about 1/2 of the mayonnaise. Make sure you slowly mix it in and don't get too much mayonnaise. Add the garlic and mix in with the potatoes (crushed, fresh garlic works best). Then add pickles, green onions, bell pepper, celery and 2 tablespoons of the yellow mustard. Mix it up at this point just to make sure it is absorbing the flavor as you create it.

Mix in the balsamic vinaigrette dressing, hard-boiled eggs, the rest of the mayo and yellow mustard, Dijon mustard, and then add the cayenne pepper. Give it a taste test to make sure it meets your personal palette desires! Cover with foil and put in the fridge to be cool by the time the rest of the food is ready.
