Nancy's Butter Horns Recipe

2 Tbsp yeast
1 cup warm water
1 cup hot mashed potatoes
1/2 cup margarine or butter
1/2 cup sugar
1 cup warm water
1 Tsp salt
2 beaten eggs
flour

Directions:
Directions:
In a large bowl, soak yeast in warm water for about 10 minutes. Add potatoes, margarine, sugar, warm water, salt and eggs to yeast. Add enough flour to make a it look like a sponge (sticky). Let rise. Add more flour to make a very soft dough. Let rise again. Roll out to 1/4" thick. Spread with butter. Fold dough in 3 (like an envelope). Roll again until about 1/2" thick. Cut into 3/4" strips, twist dough, then roll up like a snail shell into a bun shape. Let raise on pans until they look light and fluffy and almost doubled in size. Bake at 350ºF until very light brown. Icing while still warm. Sprinkle finely chopped walnuts on top if desired.

Icing:
1 Tbsp butter, 2 Tbsp boiling water, icing sugar, 1/2 Tsp vanilla

Mix margarine and boiling water together until butter melts, add enough icing sugar to make a thin icing, then add vanilla and blend well. Icing shouldn't be too thick as you'll want to drizzle over butter horns.

This recipe is from the 1920's perfected by my Great Auntie Nancy. These were baked in the boarding house for many years and ALWAYS a family favorite!
