5 3/4 - 6 1/4 c. all purpose flour
2 c. milk
2 pkg. dry yeast
2 eggs
2 tsp. salt
1/3 c. shortening

Preheat oven to 375º. In a large mixing bowl, combine 2 1/2 c. flour and yeast. In a saucepan, heat together milk, sugar, shortening, and salt until just warm, stirring constantly until shortening almost melts. Add the liquid mixture to dry mixture. Add the eggs. Beat with an electric mixer at low speed for 30 seconds, scraping the sides of the bowl constantly. Beat the mixture for 3 minutes at high speed. By hand, stir in the rest of the flour. When the dough becomes difficult to stir, turn the dough out onto a lightly floured surface. Knead in the remaining flour for 6-8 minutes until smooth and elastic. Place into a well greased bowl and turn over. Cover and refrigerate overnight allowing the dough to rise. Shape the dough into 2 loaves and place into 2 greased loaf pans. Cover dough and let rise until nearly doubled, 45-60 minutes. Bake 35-40 minutes. If the top browns too quickly, cover loosely with foil after 20-25 minutes of baking time. Tap the loaf and if it sounds hollow it is done. Remove from pan.
