2 lbs. boneless, skinless chicken breast
1 1/2 c. instant rice
1 can peas, drained
1 can carrots, drained
14 oz. can chicken broth
1 can cream of chicken soup
1/2 pkg. Lipton onion soup mix
1/4 tsp. pepper

Directions:
Directions:
Preheat oven to 325º. Cut chicken into bite-size pieces. Add rice to a 9 x 13 inch pan. Cover rice with chicken. Add drained vegetables. Mix broth, cream soup, soup mix, and pepper together and pour over chicken and rice. Bake for 2 hours. Cover with aluminum foil the last 1/2 hour. Add additional water during baking if casserole looks dry.
