Butter
Cooking oil

Cornmeal

Directions:
Directions:
•Chop onion into small pieces.
•If rind on squash is thick, peel some of it off. Cut it into pieces. I usually cut the squash in half lengthwise and then do slices about ¼ inch thick.
•Heat butter and cooking oil in skillet. I find a non-stick skillet works best for this.
•Add onion and squash
•Salt and pepper to taste
•Cook over medium heat until squash just begins to soften. If there is a lot of water in the pan, drain it off before adding cornmeal.
•Sprinkle enough cornmeal over squash to lightly cover each piece
•Turn heat up a bit and allow cornmeal to brown. Stir/flip squash occasionally so all sides are browned and squash is the desired tenderness. This part works best if there is some extra butter in the pan so feel free to add more if necessary.
