1 cup whole-wheat flour
1 cup all purpose. flour
2 tablespoon. sugar
1 ½ teaspoon. baking powder
½ teaspoon baking soda
¼ teaspoon salt
2oz. butter or margarine. (1/2 square)
Approx. 1 cup of buttermilk

Preheat oven 400oF.

Whisk all dry ingredients together. Rub in the butter until it resembles coarse breadcrumbs.
Make a hole in the middle and pour in the milk. Fold together with a spoon. The mixture should come together quite easily if too dry add a little more milk. The mixture should be soft but not sticky.
Turn out onto a floured board and roll with hands to the desired shape. Do not knead or over work.
Cut a cross in the top of the bread if using a round pan.

Use a 1lb loaf pan or an 8in round pan.
Bake for 35-40 minutes depending on your oven.
The bread is ready if it makes a hollow sound when tapped on top.

This is a whole-wheat version of Soda bread, commonly known in Ulster as Wheaten Bread and is a staple in most Irish households. There are a few theories as to the significance of the cross in the top. Some believe it wards off evil or lets the fairies out.
