1 1/2 lbs lean ground beef
2 stalks celery diced
1 green bell pepper diced
1 small onion diced
1 quart beef stock
1 quart V8 juice
1/2 cup long grain rice
1 can kidney beans rinsed
1 cup frozen kernel corn
2 cloves garlic minced
2 tbsp chili powder
1 tsp cumin
1/2 lime
2 bay leaves
fresh cilantro

Directions:
Directions:
Brown ground beef completely, seasoning with salt and pepper to taste. Add garlic, onion, bell pepper, celery, cilantro. Fry slightly. Add beef stock, V8 juice, rice & bay leaves. Squeeze in the juice of the lime and throw the squeezed lime in the pot. Simmer soup on low for an hour or so. Add kidney beans, corn and another tbsp fresh cilantro. Heat through. Serve topped with corn chips, shredded cheese, sour cream, guacamole or any other taco toppings.
