Ingredients: 2 cups pecans 1/3 cup cocoa 1 tsp baking powder (aluminum free) 1/4 tsp sea salt 1/2 tsp stevia and 1/2 cup xylitol (xylitol can be purchased at Health Food stores - quite pricey, but looks exactly, and tastes almost exactly, like sugar, without the negative side effects of sugar) 1/2 cup butter (not margarine) melted 2 squares unsweetened chocolate 1 tsp pure vanilla extract (with no sugar - check the label) 4 free range or Organic eggs 1/2 cup unsweetened almond milk - (I didn't have this, so I used part coconut milk (Thai brand) and part organic yogurt. And I put in more than 1/2 cup

Directions:Heat oven to 350. Line a muffin tin with paper liners or silicone cups Process pecans in food processor - pulse until they are meal Add the rest of the dry ingredients and pulse again. Heat butter and chocolate in double boiler until melted Take off heat and add in Vanilla In separate bowl, combine eggs, lightly beaten, milk and/or yogurt. Add in butter/chocolate mixture Add the dry ingredients to wet ingredients and blend together with mixer until smooth. Fill muffin cups 3/4 full and bake for 20 minutes. The exact time will vary with the pan. Start checking at 17 min. When you can smell them baking, it is a good time to start checking for readiness. When toothpick inserted in centre comes out clean, the cupcakes are done. DO NOT OVER BAKE. |
