3 large eggs - beaten
1/2 pound FETA cheese
1/2 pound drained cottage cheese (large curd is better)
4 Tbs. melted butter
canola oil
1/4 c. sour cream (can omit,but it really is best with it)

Directions:
Directions:
Soak FETA in a little milk when you buy it-put it in a covered container till ready to use. Take out and dry with paper towel.
Break up FETA; mix in drained cottage cheese; add beaten eggs and sour cream-should be thick like oatmeal.
In a greased rectangular pan, place 3-4 leaves phyllo, sprinkle with mixture of oil & melted butter. The begin layering - a sprinkle (with a fork) of filling; crumple 2-3 phyllo leaves over this-sprinkle with butter/oil mixture- keep layering until you have 3 phyllo leaves left for the top; sprinkle with butter/oil and bake at 400 if aluminum/glass pan for 15 minutes; lower to 350 and bake another 20-30 minutes till golden-will puff up.

2nd VARIATION:
Line the pan with 3-4 phyllo leaving a little hanging out -these you will roll down to form an edge. Then you take each phyllo leave-crumple like a rosette- into the filling and take out and place into the lined phyllo pan so you will have probably about 20 or more rosettes and then you top off with 3 buttered/oiled phyllo leaves. Bake as above.
