1 large head sour cabbage, separated, rinsed in cold water, drain well and cut into suitable pieces for rolling

Filling:
2 cup rice
2 cup boiling water
1 medium onion, finely chopped
1/2 cup cooking oil
2 Tsp salt
Pepper to taste

Directions:
Directions:
Rinse rice and add to boiling water, add salt and pepper. Bring to a boil and cook for 1 – 2 minutes. Cover, turn off heat and allow to stand until all water is absorbed. Saute onions in oil until tender. (Do not brown) Add to rice and mix well. Cool before rolling holubsti. Place a spoonful of filling on one end of the cabbage leaf, roll up, seal edges. Arrange in casserole with light cover. Pour 1/2 cup water and 1/2 cup melted lard or margarine over holubsti.
Bake at 350°F until tender to the touch of a fork. Serve with sautéed onions and bacon, chopped finely.
