1 cup small cauliflower florets
1 cup baby carrots, cut in half
1 cup mushrooms, cut in small pieces
2 tbsp water
1 cup snow peas, cut into pieces
1 (14oz) can artichoke hearts, cleaned and chopped
1/2 cucumber, diced
1/4 cup garbanzo bean, rinsed and drained
1/4 cup frozen green peas
3 green onions, sliced thinly
2 (6oz) cans solid white albacore tuna, drained
3 oz cheddar cheese, diced
1 cup fat free Zesty Italian Salad Dressing
1/4 cup grated parmesan cheese
1 tsp lemon pepper

Directions:
Directions:
Combine cauliflower, carrots, mushrooms and water in a bowl. Cover tightly and microwave for 5 minutes. Let stand for 3 minutes, covered. Drain completely, then pat vegetables dry. Combine with remaining ingredients and mix thoroughly. Refrigerate overnight. Makes 4 (1 1/2 cup) servings.
