2 Pita bread pockets, split open to make 4 crusts
Red pepper hummus (a small container, 6 oz?)
Red and Yellow bell pepper, chopped coarsely
Zucchini, sliced and halved
Artichoke hearts, quartered
Cherry tomatoes, halved
Olives, halved
1/2 lb. Italian sausage (hot, if you like it)
Olive oil
Parmesan cheese, grated
Salt and pepper

Preheat oven to 400. In a skillet, fry up the Italian sausage until all pieces are a little past browned, then remove from heat.

Put the four pita "crusts" on a baking sheet. Brush olive oil on each one, covering them. Lightly sprinkle Parmesan cheese on each. Spread a layer of hummus (1/8") on each crust. Sprinkle the Italian sausage evenly on each. Then put the vegetables on - mine are just suggestions, and they're good suggestions, but use what veggies you like. Salt and pepper for flavor, even adding more parm if you would like.

When your pita pizzas look how you like, put the sheet in the oven for about 10 minutes, checking periodically.

I like this recipe because it's easy and fun to do with groups who like different things on their pizzas. It's also cheeseless (except for the little bit of parm), so it's so much healthier than regular pizza. And as with everything I do and every recipe I've submitted here, so many of the ingredients are interchangeable with whatever you like.

This can also be done on a Boboli crust that you buy in the store. Enjoy!
