Ingredients: Pasta, large shells Broccoli Mushrooms 1 can of Tomato Sauce 2/3 to 3/4 Half and Half Garlic, 2 cloves chopped 1/2 to 3/4 cup Parmesan cheese, shredded or grated Italian seasonings as you wish Olive Oil

Directions:Bring a pot of water to a boil. At the boiling point, throw in your large shells. Depending on the pasta brand, they should take about 15 minutes to cook, so start your timer and put your large saucepan/skillet on a burner.
Put a few tablespoons of olive oil in the pan, along with the chopped garlic.
In another pot (or steamer), start steaming your broccoli, which should take 3 minutes.
When the garlic in the saucepan starts to sizzle, throw in the mushrooms. Wait about two minutes until the mushrooms start to get soft and then add the tomato sauce and 2/3 cup Half and Half. Stir. Here's where you want to test the color sauce you like; it should be a good pinkish color, but if you like it more creamy, then add a little more Half and Half. When the broccoli is done in the steamer, throw in the broccoli with the other veggies & sauce. Stir all of this together while the pasta finishes cooking. Add salt and pepper, garlic salt, Italian seasonings as you wish. Be aware that cooking the vegetables a little bit more than we're used to in this recipe is actually a good thing, so don't fret.
When the pasta is done, drain it, then combine pasta with the saucepan mixture in a separate bowl. Add a good amount of Parmesan cheese and fresh pepper to flavor. Serve with crunchy bread for mopping up! |

Notes: Yes, you guessed it. This is my version of The Pasta House and Charlie Gitto's recipe. It's much healthier, but replace butter with olive oil and use half-and-half instead of so much cream and that's what happens! Be merry with that garlic usage though, and I think it turns out just as good, but you be the judge. Now this recipe at home doesn't quite replace a Charlie Gitto's plate of toasted raviolis, a house salad and Pasta Con Broccoli before a Cardinals game - they still have the corner on that market.
