Pie crust (bake this first, about 10 minutes/350º)
Filling:
2 T. cocoa
1 c. sugar
3 heaping T. flour
1 c. milk
3 beaten egg yolks (save whites for meringue)
2 1/2 T. butter
1 t. vanilla
Meringue:
3 egg whites
1/4 t. cream of tartar
3 T. sugar

Directions:
Filling: Use a heavy iron skillet instead of a double boiler for best results: Mix together cocoa, sugar, & flour. Scald milk. Add half of milk to egg yolks and pour into dry mixture in iron skillet. Add remaining milk, cook over medium heat stirring CONSTANTLY until thick. Add butter and vanilla. Pour into baked pie shell. Top with meringue from egg whites. Brown in oven.
Meringue: beat egg whites and cream of tartar until stiff. Gradually add sugar and continue beating. Top pie crust and bake at 350 until brown.
