1/2 c. sugar
3 Tbsp. cornstarch
1/4 tsp. salt
1/3 c. water
2 Tbsp. lemon juice
6 c. blueberries, divided
1 Tbsp. butter
1 - 9” pie shell cooked

Directions:
Directions:
In a large saucepan combine sugar, cornstarch and salt; add water and lemon juice. Add 2 ½ cups of the blueberries and toss lightly. Cook and stir over medium heat until bubbly. Cook and stir 2 min more (mixture will be thick). Remove from heat and stir in butter; cool.
Add remaining 3½ cups blueberries to cooked filling, stirring gently. Turn into pie shell. Cover and chill at least 2 hours before serving. Serve with Vanilla Bean ice cream.
