1 lb. shrimp
8oz smoked sausage, cut into bite size pieces
1 med onion, chopped
1/3 c. celery, chopped
1/4 c. bell pepper chopped
2 cloves garlic, minced
2 tbsp. oil
2 c. chicken broth
1 14.5 oz. can diced tomatoes
3/4 c. rice
1 tsp. thyme
1/2 tsp. basil
14 tsp. each red pepper and black pepper
1 bay leaf

Directions:
Directions:
In large pot cook onion, celery, and garlic in oil until tender. Add chicken, broth, rice, undrained tomatoes, sausage, and seasonings. Bring to a boil; reduce heat and simmer, covered, 15 min. Add shrimp and return to a boil. Reduce heat and simmer 5 more min. Discard bay leaf before serving.
