3 cups heavy cream or whipping cream
6 egg yolks
1/2 cup sugar
1 t. vanilla
1/4 cup brown sugar

In a one quart saucepan, heat the cream over medium heat until tiny bubbles form around the edge of pan.

In a 2 quart saucepan, with a wire whisk, beat egg yolks with sugar until blended. Slowly stir in warm cream. Cook over medium heat, stirring constantly, until mixture coats the back of your spoon, about 15 minutes, ( DO NOT BOIL OR IT WILL ALL CURDLE) Stir in vanilla. Pour into a 1 1/2 quart casserole dish and chill for 6 hours.

About 2 hours before serving, preheat your broiler.

Sprinkle brown sugar over the top of chilled cream, broil until sugar melts, making a shiny crust, 3 to 4 minutes. Chill

To serve, with a spoon tap to break the brown sugar crust
