10 oz dry Gluten Free Lasagna Noodles
4 C Spaghetti Sauce
15 oz Part-skim Ricotta cheese
15 oz Cottage Cheese
1/4 C grated Parmesan cheese
2 eggs
8 oz shredded mozzarella cheese divided
opt: 1 lb lean Ground Beef or Italian Pork Sausage
opt: fresh or frozen spinach drained

Cook noodles in boiling water for 8 minutes. Drain and rinse with very cold water. Make Spaghetti Sauce or open 2 jars to equal 4 cups. If you want meat in the sauce, cube and brown optional ground meat. Using slotted spoon remove browned ground meat and add to spaghetti sauce.

Heat oven to 350º. In a medium size bowl, using an electric mixer, combine ricotta cheese, cottage cheese, and eggs.

Spread 1/3 of the sauce in the bottom of a 13x9 inch pan. Add one layer of cooked lasagna noodles, 1/2 of the ricotta cheese mixture, 1/2 of the mozzarella cheese. Repeat layering ending with last 1/3 of sauce. Top with grated Parmesan. Cover with aluminum foil. Bake 55 minutes. Uncover and bake an additional 15 minutes. Remove from oven, and let stand 20 minutes. Serve with additional spaghetti sauce if too dry.

If you prefer, you can substitute 15 oz of additional Ricotta Cheese for the Cottage Cheese.
