6 chicken cutlets
2 eggs, lightly beaten
1 c seasoned bread crumbs
3 tbsp olive oil
Mozzarella cheese, sliced
1 pt heavy cream
1 c Parmesan cheese, grated
2 tbsp parsley, chopped
salt and pepper to taste

Directions:
Directions:
Preheat oven to 325. Dip chicken cutlets into beaten eggs; coat with bread crumbs. Heat oil in a frying pan on medium heat. Add coated chicken and brown lightly on both sides. Remove from pan and place in a baking dish, topping each cutlet with a slice of Mozzarella cheese.

Mix together remaining ingredients in saucepan used to fry cutlets. Cook until mixture gets hot and thickens. Pour over chicken and bake for 25 minutes. Great served over pasta!!
