1 Butternut Squash
2 crisp Apples
1 can low-fat chicken broth
1 c. fat free half & half
˝ - 1 tsp curry powder (to taste)
1 large sprig fresh Rosemary
1 tbsp. Sour Cream

Directions:
Directions:
Cut squash in half, remove seeds, place in a microwave safe shallow pan face down in a few inches of water. Microwave for ~15 minutes (depending on size of squash), or until soft.
Peel and core apples, microwave until soft (about 3 minutes). Place apples, squash, chicken broth, and rosemary in a blender and blend until smooth. (May need to do small portions at a time.) Transfer to a saucepan and add the half & half. Heat on medium heat and add curry powder to taste. Heat until hot, but do not boil. To serve, spoon into a soup bowl and top with 1 tablespoon sour cream.

Careful if you serve this at Thanksgiving, you may end up with a lot of left over turkey!
Matt’s mom made this for us one winter and it is by far my favorite soup/bisque EVER! It’s easy to make, and can be stored in canning jars in the fridge if need be, though ours have never lasted more than a day or so.
