4 lbs. sauerkraut
1 1/2 Tbsp. caraway seed
1/2 cup brown sugar
1 large onion
1/2 cup butter
1/2 c. flour (approx.)

Directions:
Directions:
Rinse kraut lightly. Put in a large pot and add enough water to cover. Add caraway and brown sugar. Simmer, covered, for 3 hours. Stir now and then. If kraut gets too dry, add a little more water.
Brown the onion in butter until onions are clear. Add flour to mixture to make a roux. Mixture needs to be thick. Once thickened, add to pot and stir. Kraut will thicken up as it cooks. If there seems to be too much water in the sauerkraut, remove some before adding the roux. Continue simmering until ready to serve.
