1 pkg. (7 oz.) coconut (2 2/3 c.)
1/3 c. sugar
3 T. flour
1/8 t. salt
2 egg whites
12 t. almond extract

Directions:
Directions:
Mix coconut, sugar, flour, and salt in large bowl. Stir in egg whites and almond extract until well blended. Drop by tablespoonfuls onto greased and floured cookie sheets. Bake at 325º for 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets to wire racks. Cool completely. Makes approximately 14-16 cookies.

Chocolate-Dipped Macaroons - Prepare and back cookies as directed; cool. Melt 4 squares semi-sweet baking chocolate as directed on package. Dip cookies halfway into chocolate, let excess chocolate drip off. Let stand at room temperature or refrigerae on wax paper-lined tray 30 minutes or until chocolate is firm.
