1 or 2 green peppers per serving
Leftover ground or finely choped beef, lamb, or veal
Cooked rice or bread stuffing
1 T. chopped onion per serving

Directions:
Directions:
Preheat oven to 350º. Cut off the tops of the green peppers and scoop out the seeds. Melt 2 T. butter in skillet, and gently cook the onions until transparent, at which point add the meat and cooked rice or (Pepperidge Farm) bread stuffing and stir so that the butter in the bottom of the skillet is absorbed. If mixture seems too dry, moisten with additional melted butter or a little beef boullion. Stuff the peppers, place them in a baking dish with a bit of water, and bake for 20 minutes in a 350º oven.
