6 scallions, chopped
1 T vegetable oil
1 # boneless, skinless chicken breast, cut in cubes
1 can coconut milk
3 T Thai green curry paste
3 T chopped cilantro

cooked rice or noodles to serve

Directions:
Directions:
Heat the oil in a large skillet. Add the scallions and the chicken and cook, stirring constantly for 3 to 4 minutes or until the chicken is browned.
Stir in the coconut milk and curry paste and cook for an additional 5 minutes or until the chicken is cooked through. Add a little chicken broth if the sauce becomes too thick.
Stir in the chopped cilantro and serve immediately over the rice or noodles.
