2 tbsp olive oil
1/2 onion, thinly slices
1 1/2 cup thinly sliced mushroom caps
1 cup packed chopped baby spinach
1/2 tsp salt
1/8 tsp black pepper
2 tbsp yellow cornmeal
2 tbsp water

Filling:
6 eggs
1/2 cup fat free half and half
1/4 tsp salt
dash black pepper
6 oz extra sharp cheddar cheese, shredded
3/4 cup (3 oz) diced ham

Directions:
Directions:
Heat olive oil in skillet. Add onion and saute until it begins to brown. Add mushroom and stir and cook until they begin to brown. Add spinach, salt, and pepper, and cook a few minutes. Add cornmeal and water and stir well. Lightly coat a 9" pie plate with cooking spray. Press mixture over bottom and partway up the sides of pie plate. Set aside. Beat eggs, half and half, salt, and pepper together thoroughly. Fold in cheese and ham. Pour filling into crust and bake at 350º for 40 minutes. Allow to stand at least 10 minutes before serving.
