12 large fresh mushrooms
1 slice white bread
water or milk to cover bread
2 clove garlic, minced
1 tbsp chopped parsley
salt and pepper to taste
2 eggs
1/2 cup ricotta cheese
olive oil
parmesan cheese

Directions:
Directions:
Remove stems from mushroom. Chop fine. Soak bread in water or milk and squeeze dry. Mix together chopped stems, bread, garlic, parsley, eggs ricotta and salt and pepper. Fill caps with stuffing. Arrange on greased cookie sheet. Drizzle a little olive oil over mushrooms and sprinkle with Parmesan. Bake in a preheated 400º oven for about 20 minutes. Serve hot (also good cold).
