4 T olive oil
2 c each chopped celery and onion
1 # chopped crimini mushrooms
1 # hot Italian turkey sausage (casing removed)
1 1/2 c chicken broth (depending on how moist you would like it)
3 T brandy
1 egg
1/2 c evaporated milk
1 # French or whole wheat bread, cubed
2 T each chopped fresh rosemary, fresh sage, fresh thyme, fresh oregano and fresh garlic
1 tsp each salt and pepper

Directions:
Directions:
Saute celery and onion until soft in 1 T oil, add garlic the last few minutes. Remove to bowl and saute mushrooms in 1 T oil until brown, remove and cook sausage in 1 T oil. Boil the broth and brandy in the same pan. Toss altogether and refrigerate overnight (covered). Bake at 375 degrees, covered for about 30 to 45 minutes.

This is a delicious stuffing that has way less calories than traditional stuffing. I guarantee it!!
