2 large butternut squash
1 cup chopped onion
3 cloves crushed garlic
3 tablespoons butter for saute
1 teaspoon salt
2 beaten eggs
1 cup buttermilk
1/2 cup crumbled feta cheese
1/4 to 1/2 cup salted sunflower seeds for a topping

Directions:
Directions:
Cut the squash down the middle and scoop out the seeds. Place face down on an oiled tray and bake at 375 for 35 minutes (or until soft). Cool until able to handle, scoop out and mash. Saute the onion and garlic in butter until the onion is translucent.
In a large bowl, beat the eggs with buttermilk and crumbled in the feta cheese. Combine everything and mix well. Spread into a buttered casserole pan and top with sunflower seeds. Bake at 375 covered for 25 minutes and uncovered for 10 minutes.
