2 T. vegetable oil
2 garlic cloves, finely chopped
1 tsp. curry powder
¾ c. chicken breast cubed
¼ c. onion, chopped
½ c. potato diced
½ c. water
¼ c. chicken stock
¼ c. grated ginger
¼ c. coconut milk

Directions:
Directions:
In a frying pan, heat the oil and fry the garlic until golden brown. Add the curry powder, stir thoroughly, and cook for 1 minute. Add the chicken and stir well to coat the meat in the curry mixture. Add the onion, potato and 2 tablespoons stock, and stir-fry over medium heat until the potato is cooked.

Stir in the remainder of the chicken stock, ginger and coconut milk, and simmer gently until the sauce thickens. Pour into a bowl and serve with white rice.
