3 sausages stripped of casings(i used jimmy dean original sausage)
1 large egg yolk
3-4 sprigs of thyme(optional)
1/4 cup pistachios(optional)
6 boneless skinless chicken thighs
18-24 stripes of thick bacon
this is the sauce after you fry in pan.
3 Tbsp. olive oil
1Tbsp. red wine vinegar
2Tbsp.marsala
1 cup chicken stock.

mix sausage,egg yolk,nuts and thyme leaves,season with salt and pepper.
lay 3-4 slices of bacon on work surface
place de-boned chicken thigh on top of bacon(i pounded the thighs a little to make thinner) place a portion of sausage on thigh roll up thigh and then roll up thigh in the bacon.
wrap this meat roll in a large piece of aluminum foil, roll tightly so its water tight-ish.
poach packets 2-3 at a time in boiling water for 20-25 min.leave in foil and let cool for 45 min. on counter.These can be frozen for later, or fryed in pan or put on grill.If fryed in pan pour off fat and deglaze with sauce and serve over chicken.
