6 Thin boneless pork tenderloins (2-3 per person)
1/3 c. all-purpose flour
1 tsp. seasoned salt
1/4 tsp. pepper
1 beaten egg
2 tbsp. milk
3/4 c. fine dry bread crumbs
1 tsp. paprika
vegetable oil - enough to coat bottom of pan about 1/4 inch.

Pound pork to 1/4 to 1/8 inch thickness. Cut small slits around edges to prevent curling. Coat meat with a mixture of the 1/3 c. flour, seasoned salt & pepper. Combine egg & milk. Dip cutlets into egg mixture, then into a mixture of bread crumbs and paprika. In a large skillet or electric frying pan @ 400 degrees, cook cutlets in vegetable oil for 2 to 3 minutes on each side. Remove to a platter, keep warm.
