10 med - lg potatoes
2/3 jar (lg) Hellmann's mayonnaise
2 T. heaping yellow mustard
1 T. dill weed
1 each red, yellow and green pepper
1 cucumber, diced
3 - 5 hard boiled eggs
1 onion
8 oz. Colby cheese, cubed
1/2 bag frozen peas

Clean potatoes and leave skins on. Bring to boil, turn down and simmer for 20 minutes. If still hard, continue in five minute increments. Cool potatoes and peel. Cut lengthwise and cube. Mix mayonnaise, mustard and dill weed. Gently fold in potato cubes. Dice peppers and fold in. Clean the seeds out of a cucumber and cube, leaving a little of the rind on. Dice 3 - 5 hard boiled eggs. Finely dice onion. Cube cheese. Fold all ingredients gently together.
