2 lbs. ground chuck
1 medium onion, chopped
1/2 green pepper, chopped
2 cloves garlic, pressed or minced
2 16 oz. cans tomato sauce
1 6 oz. can tomato paste
1 c. water
2 tbsp. fresh sweet basil or 1 tbsp. dried
1 1/2 tsp. sugar
salt
pepper
1 8 oz. package manicotti shells
1 16 oz. carton ricotta cheese
2 c. shredded mozzarella cheese
1/2 c. grated Parmesan cheese

Directions:
In a skillet, brown beef with onion, green pepper, and garlic. Drain. Add tomato paste, tomato sauce, water, basil, and sugar. Season with salt and pepper. Mix well. Simmer for 45
minutes stirring occasionally. Cook manicotti shells. Drain and set aside. Place 1/2 c. sauce in 9 by 13 baking dish. Combine ricotta and mozzarella. Stuff shells with small tsp. and place on sauce-lined dish. Pour remaining sauce over shells and sprinkle with Parmesan cheese. Bake at 350º for about 30 minutes. Serves 6 to 8.
