3 c. fresh or frozen corn (cooked & drained)
1 6oz. can 2/3 cup) evaporated milk
1 beaten egg
1 T. finely chopped onion
1/2 t. salt
dash pepper
4 oz. process Swiss cheese, shredded (1 cup)
1/2 c. soft bread crumbs
1 T. butter or margarine, melted.

(If using fresh corn: Cook fresh corn in 1 cup boiling salted water for 2 to 3 minutes, or till just tender; drain well.) Combine corn, evaporated milk, egg, onion, salt, pepper, and 3/4 cup of the cheese. Turn into baking dish. Toss bread crumbs with the butter or margarine and remaining 1/2 c. cheese. Sprinkle over mixture. Bake in moderate oven (350º) for 25 to 30 minutes. Garnish with green pepper rings (optional).
