Turkey Potato Soup Recipe

2 tsp. Salt
3 cups Water
4 Potatoes, Thinly Sliced
2 Stalks Celery, Finely chopped
2 Onions, Chopped
6 cups Thin White Sauce (see Recipe Below)
2 tsp. Celery Salt
2 cups Cubed Turkey
12 ounces Whole Kernel Corn

Add salt to water in large kettle. Bring to a boil.. Add potatoes, celery, & onion. Cook until tender (about 15 minutes). Add white sauce, seasonings, turkey and corn. Heat through. Makes 12 cups soup.
WHITE SAUCE:
6 Tbsp. Butter
3-6 Tbsp Flour
1 tsp. Salt
3/4 tsp. Pepper
6 cups Milk (Fat-free, 2%, or Whole)
Melt butter over low heat in heavy saucepan. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth, bubbly. Remove from heat. Stir in milk. Bring to boil, stirring constantly. Boil 1 minute.

One of our favorite uses of leftover turkey. I often prepare cubed turkey and freeze 2 cups in a freezer bag so I can make this soup whenever we're hungry for it.
