2 cupc corn (frozen)
1 onion, sliced thin
1 clove garlic, minced
3 Tablespoons olive oil
1/2 lb zucchini, 1/4 inch rounds
1 green pepper, cut in strips
1 1/2 tomatoes, chopped
1 1/2 teaspooons chili powder
Salt & pepper to taste
1/3 cup grated cheddar cheese

Directions:
Directions:
Cook onion & garlic in oil until onion is soft. Add
zucchini and green pepper, saute for 3 minutes with
onion. Add corn, tomatoes, chili powder, salt and pepper. Put in a buttered baking dish and bake covered for 15 minutes at 350. Add the grated cheese and bake till cheese is melted.
