1/2 cup onions, chopped fine
1/2 cup celery, chopped fine
1/2 cut carrots, chopped fine
4 tbsp butter or margarine
2 beef bouillon cubes
3 cups water
2 cups milk
3 tbsp instant potatoes
4 medium potatoes, diced
Salt and Pepper
Chopped parsley, if desired

Directions:
Directions:
In a 2 quart pan, saute onion, celery, and carrots in butter. Add water, bouillon cubes, salt and pepper. Bring to a boil. Add diced potatoes and cook over medium heat until potatoes are well done. Add milk and instant potatoes, stirring a lot. Simmer for 5 minutes. Add chopped parsley if desired. Serve hot. Garnish with croutons if desired.
