5 large eggs
3 large egg yolks
1 cup half and half
1 cup whipping cream
4 cup mozzarella cheese-divided
1/2 teaspoon salt
1 lb. Italian sweet sausage
1/2 cup chopped shallots
2 cloves garlic-minced
1/2 cup chopped/drained oil packed sundried tomatoes
4 Tablespoons fresh parsley-chopped-divided
3/4 cup mushrooms-chopped

Directions:
Preheat oven 375 degrees. Brown sausage and drain grease then return to pan. Add shallots, garlic & mushrooms, saute 3 minutes. Add sundried tomatoes and 2 Tablespoons parsley. Stir for 1 minute. Place mixture in 9x13 baking dish-pressed down.

In mixing bowl, whisk together eggs, egg yolks, half and half, whipping cream, 2 cups of the mozzarella cheese. Blend well. Pour over sausage mixture. Sprinkle remaining cheese and parsley on top. Bake about 30 minutes until top is golden brown and knife inserted in center comes out clean. Let it stand 5 minutes before serving. May top with marinara sauce like a McWilliams would.
