3 pounds apples - Macintosh, or other apples of
your choice.
(Red Delicious apples don't cook
down well.)
cinnamon - about 1 tablespoon
brown sugar - about 1/2 cup
a little water

Directions:
1. Peel, quarter, core and cut apples into large chunks (We always see if we can get the peel off an apple in one go - or, gadget guys like Gary found an old apple peeler to use, which is fine, but I found that it makes the floor around it sticky).

2. Cover the bottom of a large pot with a little water, just enough to keep the apples from frying.
Turn on medium heat. When apples start to cook, lower heat a little so they are just simmering.

3. Stir frequently. If you want soft applesauce, allow to cook until chunks have broken down. But if you like chunky applesauce, remove apples from heat just when chunks have softened.

4. Remove from heat. Add cinnamon and brown sugar to taste. About 1/2 cup brown sugar and a tablespoon of cinnamon will do, though some of us prefer extra of one or both of these ingredients.

Christina's applesauce has been a family favorite of ours for many years. We prefer large chunks of apples in the sauce. Gary liked his heavy on the cinnamon and brown sugar. But whether seasoned lightly or dark with larger amounts of sugar or cinnamon, it's great!
