Flour 9 level cups
Milk 10 cups
Salt 1 tablespoon
Oil 3 tablespoons ( canola oil )

Combine all the eggs with all the flour, salt & oil. Add just 7 cups of milk & beat the hell out of the batter with a Kitchen Aid machine with the whisk beater. Run until SMOOTH and no LUMPS. Slowly add the rest of the milk. The batter viscosity should RUN OFF a rubber spatula readily when held at a 45* downward angle. If not add a little more milk.

Use two flat cast iron pancake frying pans & oil them lightly between each set of two pancakes with a paper towel moisten with canola oil.Each pancake requires 1/3 cup of batter. Make sure batter covers entire pan. Keep the pancakes warm in the oven on a glass pie dish.
